Korean-style fried chicken is a hit product in the pre-made snack industry. Available in sweet-spicy, garlic, original and many other flavours, it serves chain restaurants, frozen prefabricated food suppliers and takeaway supply chains. Famous for its thin, crisp crust and juicy meat, it maintains strong market demand all year round. Korean-style fried chicken adopts a double-frying process. Its thin and firm coating resists softening even after saucing. However, chicken pieces are irregular in shape and size, and high coating adhesion is required. It sets strict standards for temperature control of frying machines, conveyor stability and oil residue purification capacity, which has become a major challenge for many pre-made food factories to improve quality in mass production.
Many food factories still use old-style frying machines and simple frying equipment for processing. Ordinary frying machines have slow temperature response. Oil temperature drops sharply once large batches of chicken pieces are fed, making it hard to realise segmented temperature control required by Korean fried chicken. If oil temperature is too high, the outer coating burns black instantly while chicken inside remains bloody and dry. If oil temperature is too low, frying time has to be extended. Chicken absorbs excessive oil, the crust turns limp and easily breaks and sheds after saucing, losing its signature crispy shell. Traditional frying lines have simple conveyor structures. Chicken chunks of different sizes float, roll and stack against each other inside the oil tank. The thin crisp coating tends to peel off in large areas, finished products show uneven appearance and raw material loss remains high.
Batter crumbs and meat scraps falling off during frying keep sinking to the bottom of the oil tank. Old frying equipment lacks an online slag scraping device. Residues carbonise under high temperature, frying oil quickly darkens and deteriorates, bringing obvious burnt bitter taste to fried chicken. Factories need frequent shutdowns to replace frying oil and manually clean residues in the oil tank, raising frying energy consumption and operating costs and interrupting continuous production of the frying line. Traditional frying equipment can hardly stably reproduce the double-frying process of Korean fried chicken, resulting in large batch-to-batch taste fluctuation and failing to meet standardised order requirements from chain brands.
Targeting the pain points of the double-frying process for Korean fried chicken, TONLE fully automatic Korean-style fried chicken frying line, the whole set of frying equipment is made of food-grade 304 stainless steel without sanitary dead corners. It is easy to disassemble and clean, suitable for long-hour non-stop continuous frying operation in factories. This frying line is equipped with a multi-point constant-temperature frying system. It can flexibly set two stages of frying temperature to precisely match the pre-frying shaping and re-frying crisping process of Korean fried chicken. Combined with a frequency conversion speed regulation mechanism, frying duration can be freely adjusted to solve industrial problems such as burnt exterior with raw interior and mottled colour, ensuring crispy crust and juicy meat for every batch of fried chicken.
The machine is fitted with flexible pressing mesh belt to prevent chicken pieces from floating and rolling. Materials are conveyed in a flat single layer, reducing collision and friction between products, protecting the surface coating and lowering the breakage and coating shedding rate. Equipped with a dynamic residue-filtering frying system, it continuously filters meat scraps and batter residues during operation to slow oil oxidation, extend the service life of frying oil and effectively cut frying oil consumption. This frying line supports electric heating, gas heating and other heating modes with high thermal efficiency and lower energy consumption. The modular frying line can seamlessly connect with upstream battering and breading equipment as well as downstream vibrating de-oiling and air cooling equipment to realise full-process automatic operation, reduce manual contact and guarantee food safety.
With mature frying technology, TONLE Korean-style fried chicken frying line stably controls finished product quality and reduces production losses, helping food factories steadily produce high-quality Korean fried chicken and seize market opportunities in pre-made snacks.
