Quick-frozen fried eggplant boxes, lotus root boxes, fresh meat stuffed eggplant sandwiches and fried vegetable stuffed boxes are popular hot-selling products for prefabricated food factories, central kitchens, frozen food supply chains and supermarket frozen categories, with rising market demand and strong requirements for continuous large-scale production. Fried eggplant boxes feature a special structure with thin batter coated outside and meat filling in the middle, while eggplant absorbs water and keeps soft. The ideal frying standard requires crispy golden batter shell without blistering or peeling, tender and tasty eggplant inside, fully cooked meat filling, intact boxes without cracking or filling leakage.
Traditional manual batch frying brings numerous industrial pain points. Lightweight eggplant boxes tend to float, flip and squeeze against each other in hot oil, leading to batter peeling, filling leakage and broken boxes with high defective loss. Manual temperature control has obvious deviation. Low temperature causes excessive oil absorption and greasy taste, while high temperature results in burnt batter surface, undercooked meat filling and shrunken eggplant. Crumbs of batter, vegetable residues and meat scraps fall off during frying, carbonize continuously and contaminate frying oil, which turns black rapidly and requires frequent replacement, raising continuous production costs. Uneven feeding and frying duration relying on experience lead to great differences in color, crispness and oil content among batches. It fails to meet the standardized, uninterrupted and stable supply demands of large prefabricated food manufacturers.
