Quick-frozen original fish tofu, spicy fish tofu, stuffed fish tofu and hot pot fish curd are mainstream hot-selling products for aquatic prefabricated food manufacturers, hot pot ingredient supply chains, chain catering and supermarket frozen food sections. Consumer market keeps expanding with strong demand for large-scale continuous production. Fish tofu is mainly made of fish paste with loose porous texture, and internal pores tend to absorb excessive oil. Qualified fried fish tofu features plump golden appearance, firm and tough skin, soft and elastic interior with uniform pores, intact shape without collapse or deformation.
Traditional manual batch frying brings various industrial pain points. Lightweight fish tofu has strong buoyancy, floats and piles up heavily in hot oil, sticks and squeezes each other, leading to broken skin, collapse and severe deformation. Manual temperature control suffers obvious fluctuation. Low temperature causes massive oil absorption inside pores and greasy products; high temperature burns outer skin quickly while fish paste remains undercooked and stiff. Tiny fish paste crumbs and protein suspended substances fall off during frying. Residues continuously carbonize at high temperature, darkening frying oil and producing strange odor. Frequent oil replacement is required, continuously lifting production cost. Uneven manual feeding and frying duration judged by experience cause big gaps in color, expansion degree and oil content among batches. It cannot meet standardized, uninterrupted stable supply requirements of large aquatic prefabricated food manufacturers.
